Recipe: Spinach, Feta, and Crouton Casserole

Last night I cooked a delicious casserole…and now you can too!!!

This recipe was inspired by Melia of Confessions of a spoon.

You will need:

– about 5 heaping cups of Spinach

-1/2 to 1 cup of Feta
(depending on how Feta-y you want it)

-3 slices of stale Bread

-1/4 of an Onion

-2 Eggs

-a Casserole dish

-a Pot

Water

Salt and Pepper

(Serves 2)

Step 1. Boil a medium pot of water and preheat your oven to 390 degrees (F)

Step 2. When the water is boiling  toss in your Spinach and let it blanch for about 2 minutes.
Remove and drain

Step 3. Cut your bread into crouton size chunks and place them into a pan with butter.
Fry them up until they are golden brown and delicious.

 Step 4. Remove your pan from the heat and toss in the feta.
Cut your onions.

Step 5. Cut your drained spinach and place it in your dish.

Step 6. Put your croutons, feta, and onions into your dish and mix.
Add salt and pepper to your hearts content.

Step 7. Bake for 20 minutes.

Step 8. When the time is up, pull the casserole out of the oven and crack two eggs on top
(you can let them sit on top but I chose to mix them in)

Step 9. Put your dish back into the oven for about 5 more minutes.

Step 10. Enjoy!
