There are a few things that I love in this world two of which are hard boiled eggs and avocados…so when I found the recipe to make avocado egg salad I knew it was love at first taste. I could eat this stuff for days…if you like egg salad and avocados I INSIST that you try this out…I promise you won’t be disappointed.
You will need:
5 hard boiled eggs
1/3 cup plain yogurt
1 tablespoon of mustard
salt and pepper to taste
cayenne pepper to taste
a large bowl
about 10 minutes

In a large bowl:
Step 1. Peel the eggs and slice into pieces.
Step 2. Pit, peel and cut avocado into pieces.
(Save the pits if you plan on saving some for later)
Step 3. Add the yogurt.
Step 4. Add the mustard.
Step 5. Add salt, pepper and cayenne to taste.
Step 6. Mash up with a fork until desired consistency.
Step 7. Eat it all.
Makes about 3 large servings.
As avocados tend to turn brown when exposed to air your egg salad will start to brown over a couple of hours (if it lasts that long). If you want to store leftovers (why do you have leftovers) then put the pits back into the bowl, cover and then put into the fridge…it should last about a day and a half.
